Makin a bunch of ferments with what was left in the fields was not enough today - this crew also nixtamalized flour corn they harvested, ground it and made some tamales with fresh salsa made from the morning's harvest! YUM!
AgSchool Cohort 2 at UH Maui College prep beds add amendments and compost before planting bush beans, sunflower, pole beans, cucumber, and basil. And ... That is not snow! They used shredded paper to mulch the new planting ... keeping in the moisture on these hot days as seeds germinate is the key.
Impossible not to smile with pride when your harvesting from a bountiful field during a fresh morning with a group of people. Windward AgSchool cohort 8 CSA harvest day.
Every cohort in AgSchool runs a 3 week CSA, and in addition to practicing harvesting, processing and food safety skills, they also get a taste for customer service as they design a newsletter to share with the CSA members. Each cohort is different and uniquely wonderful. Check out the newsletter from Cohort 8 @ windward site. Also ... aside from the veg crops overfilling the AgSchool plots, students also take part in longer term crop plots. Pictured here is the recent corn harvest that will be ground into delicious cornmeal - that is if it isn't just used for decoration since it is so gorgeous!
